Kwik Eggbyte

Real quick egg bite that is filling and easy to prepare

What do you need?

  • Boiled Eggs (soft or hard as per your taste)
  • Mini Croissant bread
  • Butter
  • Salt and Pepper
  • Corriander and Mint leaves for paste (optional)
  • Tomato Ketchup and Mustard Sauce (optional)

How do you go about it?
Boil the eggs as per your preference, I kinda don't like hard boiled, love the soft wet core. Once you have the boiled eggs ready cut them into 2 halves. Cut open the croissant bread and butter the insides. Slip in the boiled egg with salt and pepper as per taste. I made it a bit desi grinding a paste of coriander and mint leaves and spreading the paste inside the croissant, it gives a nice taste and the green color kinda looks cool to me :)
Preheat a panini grill, any other grill will also do ... I prefer panini.
Once the grill is heated place the sandwich in and let it grill for 3 to 4 minutes till golden brown. Serve hot with ketchup and mustard sauce.

Sausages in a platter

Chicken Sausages cooked in oriental style. It's quick, easy and ready in minutes!

  • 200gm Chicken Sausages (smoked flavor is better)
  • 1 large tomato
  • 1 or 2 Onions
  • 1 or 2 Capsicum
  • 2 tbsp garlic and ginger
  • 3 tbsp Olive Oil
  • 1 tbsp soya sauce
  • Salt, Oregano, crushed pepper to taste

How do you go about?
Chop the onions in rings. Take a deep glass bowl, toss in the onions and oil and microwave for 2 minutes on full power. Mix. Toss in the capsicum, tomato, garlic and ginger and mix. Microwave for 4 minutes on full power. Remove. Toss in the chopped sausages, sprinkle soya sauce, salt, oregano and pepper as per taste and microwave again for 2 to 4 minutes. (Remember ... you are always using a closed bowl if there is no lid ... use a plastic cling wrap ... we want to retain as much water content as possible while we cook.) Remove from microwave, mix well, garnish with lettuce leave and serve hot.

Corned Beef Spaghetti

If you love corned beef and spaghetti ... this is a must try ... it's quick, easy and basic and tastes lip smacking great. Depending on the quantity it can be a light breakfast to a heavy meal.

What do you need?
  • Spaghetti (approx 200gm)
  • Corned Beef (1/2 cup)
  • 1 cube Maggi Vegetable Stock
  • Diced Frozen or Fresh Mixed Vegetables (optional)
  • Oil and Soya Sauce to taste

How long does it take?
10 minutes to cook spaghetti, 2 minutes for the stock, 5 minutes to cook.

Getting your hands dirty...
Firstly cook the spaghetti as directed on the pack. Drain excess water and keep it aside. Take a 1/2 mug water and pour into a deep pan, break the vegetable stock cube and add some oil (2 -3 tbsp). Bring to boil. Add the corned beef to the vegetable stock vigorously stirring and mixing the stock and beef. Add Soy sauce as per taste. Once the corned beef is well spread into smaller granular portions you can add the spaghetti and cook for a few minutes till the stock evaporates. Don't let the entire stock evaporate, we need some to stay.

You must have noticed we are not adding any salt. We have already added some salt while cooking the spaghetti and corned beef contains enough salt. There is no need to add any more extra salt, unless you really enjoy salty stuff.

The optional part.
Blanch some lettuce and boil some frozen or fresh diced vegetables for a few minutes and add to the spaghetti prepared. Garnish and serve.
If you are not a beef eater, you can substitute the corned beef with minced meat or minced chicken or if you are vegetarian you can use Nutrela Soya Granules. However; I doubt on the taste. Corned beef tastes way better than meat, chicken and soya granules.

Serves one big eater or two light eaters.

Chicken in minutes

By far the quickest way to make real yummy chicken in a microwave with the most basic ingredients. Perfect for bachelor cooking.

How quick is it?
2 minutes to gather and chop the ingredients. 1 minute for the stock. 2 minutes for cooking chicken in the stock. 2 minutes for sauté. 3 minutes for cooking it all together.
Total time - 10 minutes ... maybe more if you have to hunt for the ingredients in the fridge, in addition I am assuming the chicken is either fresh or defrosted. If you calculate the time to defrost in a microwave, you may add up another 5 to 10 minutes.

What do you need?

  • Approx. 250gm boneless chicken breast
  • 1 large capsicum
  • 1 large onion
  • 1 tbsp ginger
  • 2 tbsp garlic
  • 1 cube of Maggi chicken stock
  • Oil as required
  • Salt and Pepper to taste minutes

Start to Finish
Take 3/4 mug of water, microwave it for a minute and drop in the Maggi chicken stock cube for instant chicken stock. If you are using frozen chicken, defrost the chicken, this may take 5 to 10 minutes in your microwave. Cut the chicken and lay it on a shallow microwave dish, pour the stock over it. Cover the dish and microwave for 2 minutes on 100% power. In the meanwhile you can chop the garlic, ginger, capsicum and onion (Time saving tip: Use ginger / garlic paste)

Remove the chicken and stock from the microwave, take a deep microwave bowl and pour in some oil and toss in the chopped garlic, ginger, onion and capsicum and microwave for 2 minutes on 100% power. Pour in the chicken stock and the chicken into the bowl along with the sauté veggies. Add Salt and Pepper to taste, mix well and microwave it closed for 3 to 5 minutes depending on how you want your chicken cooked.

Remove from microwave, let it stand for a minute, mix well and serve with garnishing.

Serves one heavy eater and 2 light eaters

Microwave Eggs

The quickest non-messy way to cook an egg in a microwave.

How quick?
Less than 2 minutes, that is the time the frying pan takes to become hot enough to drop the egg.

What do you need?

  • 1 Egg
  • 1 tbsp butter / oil
  • Salt and Pepper to taste

How do you go about it?
Take a tbsp of oil or butter (if butter melt the butter) in a microwaveable mug and swirl the mug so that the walls of the mug get coated with oil / butter. Break and drop in the egg. With the help of a fork pierce the egg yolk (the yellow portion). Make sure you pierce the yolk well enough, else the yolk will go boom in the microwave. Cover the mug with a plastic cling wrap keeping a small opening on one of the sides.
Microwave the mug for a minute and a half to minute in the microwave at 75% power.
Remove from the microwave, let it stand for a minute and sprinkle salt and pepper to taste and relish.

Microwave Scrambled Eggs

Quick Scrambled Eggs in minutes. So quick and so good, I swear I will never ever cook scrambled eggs out of a frying pan. Trust me!

What do you need?

  • 1 Egg
  • 1 tbsp butter
  • 2 tbsp milk
  • Pepper and salt to taste
  • Oregano (optional
  • Mug ... an all important microwavable mug :-)

How long does it take?
Trust me ... not more than 3 minutes ... unless you waste time hunting for pepper, milk and butter in your kitchen or run down to the store to get eggs :-)

How do you go about it?
Let that tablespoon of butter get into the mug, microwave the mug with the butter for 10 to 20 seconds on full power till the butter melts. Remove from microwave and break in the egg, add 2 tbsp of milk, salt, pepper to taste and beat well ... real well.
Microwave for 20 seconds on full power, remove, mix put back in again for 20 min, remove and mix again. Finally put it back in again for 20 to 40 seconds or more depending on how hard or soft you want your scrambled eggs to be. Remove from microwave, mix well and relish straight out of the mug or spread it on a toast :-)

Minced Meat in minutes

A real kwik method to make yummy minced meat in minutes with the most basic ingredients in a microwave.

What you need?

  • Frozen or Fresh Minced Meat (approx 250gm)
  • 1 large onion
  • 1 large tomato
  • 1 large capsicum
  • Tomato Puree
  • Ginger Chopped Fine (2 to 4 tbsp)
  • Olive Oil
  • Salt to taste
  • Chili Sauce to taste
  • Wedge of lime

* the above quantity is good for one person or two light eaters

How long will it take?
Max of 10 to 12 minutes not including the time you take to chop the ginger, onion and tomato. Since you are cooking in a microwave; while the microwave does the cooking you can still enjoy your TV show or tweet or text on your cellular phone.

How to go about it?
Take a glass bowl preferably with a lid, else use a cling wrap. The whole idea of covering while cooking in a microwave is to make sure you retain as much water content naturally available in the ingredients rather than adding any surplus water and loosing the actual taste and flavors.

In the glass bowl pour in some olive oil (you may use any other light oil if olive oil is not available). Toss in finely sliced onion rings and finely cut capsicum and chopped ginger and cover the bowl. Microwave for 2 to 3 minutes in full power. You will hear a sizzling sound of sauté. Mix and add tomato cut in big pieces and the minced meat, salt and chili sauce to taste. Microwave till cooked well for 5 to 8 minutes with occasional mixing of the ingredients.

Once cooked, serve hot with a wedge of lime and garnishing as per your creativity!

Maggi Mushroom Twist

The same old favorite Maggi Instant Noodles with a twist. Toss in some mushrooms, lettuce, pepper and a dash of lime for an excellent wholesome quick snack. I took a bit under 7 minutes

What do you need?
  • Instant Noodles (any brand)
  • A can of mushrooms
  • Coarse ground pepper (as per your taste)
  • Olive Oil (1 or 2 teaspoons)
  • Soy Sauce (1 to 3 teaspoon)
  • Lettuce
  • A wedge of lime

How do you go about it in minutes?
Real quick and snappy, bring water (remember to add 50ml to 100ml more  water than specified on the packet, we need it to be slightly soupy) to boil and throw in the noodles and the tastemaker that normally come along, Pepper, Olive Oil, Soy Sauce and the Mushrooms (you don't need the entire can, take maybe half a can or a bit less or a bit more depending on your mood and taste).

Let it all cook for a few minutes, keep ocassionally stirring the mixture. When you feel the noodles are almost done, it is time to throw in the lettuce leaves. The lettuce will cook in no time. Once you feel the leaves have gone soft it is time to turn off the stove and serve hot with a dash of lime ... yes ... don't miss the lime ... it kinda really spikes the taste.

Weight Watchers Meal

This quick healthy, almost zero cholesterol, oil and fat free meal can be your lunch, dinner or a bite. I had it as a pretty filling dinner

What did I use?

  • 1 potato
  • 1 tomato
  • 1 capsicum
  • Lettuce leaves
  • Handful of sweet corn
  • Any bread or bun, I used a whole-wheat sub
  • Salt, Pepper and Tabasco Sauce

What did I do?
I slit the potato length wise, covered it in cling wrap plastic and tossed it in a microwave for 4 minutes.
Next, I mashed the potato, added some salt and pepper to it and stuffed it inside the sub / bread and grilled it using no butter or fat.
Second stage, I slit open a capsicum and stuffed it with fresh corn and covered it in cling wrap plastic and microwaved for 2 minutes.
Third stage, sliced the tomato and sprinkled salt and few drops of chilli sauce on it and set it on lettuce leaves.
Arranged it as shown in the picture and relished a nice healthy light nutritious meal :-)
