Kwik simple and easy pasta recipe with lots of mushroom and tomato
What do you need?
- Pasta (cooked, any variety)
- Tomato
- Fresh or Canned Mushroom (any variety as long as they are edible)
- Onion
- Garlic (more the merrier)
- Ginger
- Pasta Sauce or Tomato Sauce
- Virgin Olive Oil (Can be substituted with Canola or Corn Oil)
- Salt to taste
Again you may notice I have not mentioned quantities. It's cooking in your kitchen not a scientific experiment in a chemical lab where the ingredient have to be in the right proportions else it will be a KAAAABBBOOOMMMM!!! Cooking is fun, it should not be bound with too many rules.
How long will it take?
Well, I normally cook pasta in excess quantity and dump it in an airtight container and refrigerate it. It remains good at-least for a few days. Besides the next time I cook something out of pasta it saves me the time to cook pasta again.
Okay, it will take around 10 minutes to cook pasta, couple of minutes to chop onion, garlic and ginger. 5 to 8 minutes max in the microwave. My guess ... Total time should not exceed 20 minutes.
How do you go about it?
If you have never done sauté in a microwave before, this is your chance to learn. Take a glass bowl, throw in some oil, toss in the chopped onions, garlic and ginger. Microwave at full wattage for 2 to 3 min, you will hear a lovely sizzling sound and the aroma of onion, ginger and garlic will take over the place. Remove from micro, mix it a bit. Toss in the tomato pieces and mushrooms in to the bowl (Note: If you are using fresh mushrooms please blanch or parboil beforehand, if you are using canned mushroom you can directly drain the liquid and use it).
Microwave again for 2 to 3 minutes. Remove from Microwave, stir mix and add some sauce and salt to taste and if need be microwave again for a minute. Dress with lettuce and serve.
